In only a couple of minutes and using only a handful of ingredients, this easy Skillet Ham and Scalloped Potato recipe comes together and is the perfect accompaniment to a meaty main dish.

Have you ever looked at the abundance of scalloped potato recipes on the internet?

I swear, and I am not exaggerating, there must be over 999,999,999,999,999.00 different versions of scalloped potatoes.

So, you may be asking, why devote a post to a recipe that already exists?

Well, if you look at the recipes, most have several "flaws" associated with them. They all use regular flour which contains gluten, many of the recipes require multiple steps and most recipes have WAY too many dishes.

What were my criteria for my easy Skillet Ham and Scalloped Potato recipe?

  1. It had to be quick and easy
  2. It had to require very few ingredients
  3. It had to be gluten-free
  4. It could not contain Whole Milk (I never have any Whole Milk lying around so I figure most of my peeps don't have any as well)
  5. it had to be considered the main meal and incorporate some leftover ham
  6. It could only have 1 dish to wash

What ingredients are required for these Easy Gluten-Free Skillet Ham and Scalloped Potatoes?

  • potatoes
  • leftover ham (optional)
  • coconut milk (or almond milk or regular milk)
  • butter
  • spices - salt, onion, garlic powder, smoked paprika (optional) and black pepper
  • OPTIONAL - cheese as a final top layer

How do you make these Skillet Ham And Scalloped Potatoes?

  • slice potatoes into ⅛ inch slices and chop the ham

  • heat the milk and butter in the microwave until the butter melts.
  • add in the spices and stir to combine.
  • add ¼ cup of the milk to the bottom of a large saute pan
  • layer ¼th of the potatoes on the bottom of a baking dish
  • pour ¼th of the milk over the potatoes
  • layer ¼th of the ham over the potatoes

  • add a layer of potatoes, then some milk and then the ham.
  • continue until all the ham and potatoes have been used (you should end up with the top layer being ham)
  • place a lid on the saute pan and heat on medium-low heat for 30-35 minutes.

Why don't you have to add flour to the milk like all the other recipes?

Because this recipe calls to be cooked in a skillet, the water from the milk and the potatoes slowly evaporates and therefore the sauce thickens naturally.

What kind of potatoes can you use?

According to The Kitchn, they suggest using Russet potatoes or Yukon Golds. Russets have the most starch and make the creamiest sauce, but Yukons tend to hold their shape a little better (although your sauce will be slightly milkier).

Do I have to use Almond Milk?

Of course not! You can use regular milk or coconut milk from a carton or a can. If you have whole milk, feel free to use it instead.

Do I have to add leftover ham to these Skillet Scalloped Potatoes?

You do not have to add any ham to the dish. Simply follow the directions omitting the ham layer. The resulting dish will be just as delicious!

Tips and Tricks for these Easy Gluten-Free Skillet Ham and Scalloped Potatoes

  • Try to get as even as possible slices. If you are brave enough (I am not!) you can use a mandolin.
  • If you end up with thicker slices, place them to the side and use them as the first layer, closest to the heat source.
  • Feel free to add cheese or change up the spices to your liking
  • If you don't have leftover ham, feel free to buy a ham steak or use Canadian Bacon (PS - Just so my fellow Americans know, in Canada, we do not have such a thing as Canadian Bacon)
  • A quick way to make sure the potatoes are cooked is to take a wooden skewer and pierce the center of the dish. You are looking to be able to easily pierce through all potato layers.
  • I have a tendency to "under" salt rather than "over" salt since it is always easier to add it when eating then it is removing it!:-)

Ingredients

  • 3 lbs russet potatoes, sliced to a ⅛th thickness
  • 1 lb leftover ham, thinly sliced (optional)
  • 1 stick (115g) of butter, unsalted
  • ½ cup milk (I use Unsweetened Almond Milk)
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp salt
  • 1 tsp smoked paprika (optional)
  • ¼ tsp black pepper
  • OPTIONAL - shredded cheese on the top (I added it for the sake of the picture;-)

Instructions

  1. In a large glass measuring cup, add almond milk and butter and heat in the microwave until butter begins to melt. Add in spices and stir to combine. Set the milk aside.
  2. In a large saute pan that has a lid, pour ¼th of the milk mixture (about ¼ cup) in the bottom of the pan. Layer ¼th of the potatoes (approximately 12 oz), making sure not to overlap the potatoes too much. Pour ¼ cup of the milk over the potatoes, making sure to try to coat all the potatoes. Add ¼th of the ham mixture.
  3. Repeat the potato, milk and then ham layering until all ingredients have been used.
  4. Place the saute pan on the stovetop of medium heat until the milk it begins to sizzle. Turn the heat down to medium-low (I had my stovetop on level "2") and cover with the lid.
  5. Cook for 30-35 minutes or until the potatoes have softened to your liking.
  6. If you want to brown the top, simply place the pan under the broiler for 5 minutes (just make sure that your saute pan is ovenproof!)

    I made this last night for dinner. I've been looking for new recipes for my leftover Easter ham. It was excellent!

    I did divert a little bit by using thinly sliced onions (one yellow onion all together) in each layer and definitely used whole milk.

    The highest praise came from my son who was thrilled that we would have leftovers from the leftovers. LOL
