Healing Ginger Lemon Gummies are a fun way to nourish kids and parents alike! With only a few simple ingredients, they’re safe for paleo and GAPS diets, with options making them GAPS Intro friendly and low carb, too!

Snack time!

If you’ve ever done the GAPS diet, especially the Intro Diet, you’ll know that one of the hardest parts is letting go of all your old comforting snacks. Gone are the chips, crackers, raw veggies and hummus, etc. You’ve got to get used to snacking on a mug of broth, a bowl of soup, or some sauerkraut (not that my kids mind that last one).

But I’ve found on my journey through GAPS that gummies and jellos can be equally as nourishing as broth/soups and ferments! Not the same, mind you, but still very valuable to gut health. I’m not talking about store-bought – just FYI. In order to get the most nutritional value from gummies and jellos you really must make them at home with quality ingredients.

Ginger Lemon Gummies

These cute little star-shaped gummies are one of my kids’ favorite GAPS snacks. There’s a lot of goodness packed into them! Vitamins, minerals, and more. As my husband is always telling my kids in a sing-song voice, “You can’t even taaaaste it!”

Ginger

This spicy (as my kids say) little root is one of my loves. And it’s not because I have red hair. Ginger is packed full of nutritiousness! It’s such a strong anti-inflammatory that it even rivals NSAIDs. And it breaks down toxic buildup that accumulates in your organs to help lower the risk of infections. Ginger is also wonderful for cleaning out the lymphatic system, in other words, it helpins you detox.

For those who struggle with allergies or lung issues (I’m raising my hand here), ginger helps break up the overproduction ofphlegm, easing your congestion while giving your immune system a boost!

Lemon

While all citrus are packed with immune-boosting antioxidants from vitamin C, lemons are especially helpful. All those antioxidants help fight inflammation and improve the immune system. They do this by neutralizing harmful free radicals and helping your body stay free from bacterial and viral infections.

Lemons also help calm respiratory problems by loosening mucus so that your body can easily eliminate it, and can even help soothe an asthma attack. Since they’re such a good source of vitamin C, lemons help with more long-term respiratory issues, too.

Honey

Speaking of being loaded with vitamin C, honey is as well! On top of that wonderful benefit, honey is full of B6, calcium, iron, and friendly bacteria. Honey is an amazing anti-fungal, probiotic, especially when it’s raw and local to you.

Gelatin

Equally as important as the above ingredients, is a good quality gelatin. Gelatin is an amazing source of essential amino acids. It’s helpful in protecting the intestines from damage and strengthening the lining of the digestive tract. This keeps the gut strong and helps prevent leaky gut syndrome. Gelatin is packed with vitamins, minerals, and organic compounds like copper,selenium, and phosphorous. Plus it’s an excellent source of proteins – it’s 98-99% protein by weight!

I love using Perfect Supplements gelatin. It’s sourced from grass-fed cattle, making it kosher, non-GMO, and of course 100% gluten-free. I do use Great Lakes gelatin as well, if I’m in a pinch. It’s also from grass-fed cattle and is non-GMO.

Healing Ginger Lemon Gummies

Free from grain, gluten, eggs, dairy, and refined sugar.

Ingredients

  • 2 cups water
  • 1 inch chunk of fresh ginger root
  • 1/4 cup grass fed gelatin (I like Perfect SupplementsorGreat Lakes)
  • 2-3 tablespoons raw honey(use 1/2 teaspoonorganic liquid steviafor keto option)
  • juice from 2 fresh organic lemons (about 1/2 cup)
  • zest from 1 fresh organic lemon (about a teaspoon – leave off for GAPS Intro)

Instructions

In a medium-sized saucepan, bring the water to a boil.

Meanwhile, grate your chunk of ginger.

Add the freshly grated ginger to the boiling water, remove from heat, and cover to steep for about 5 minutes.

In a quart-sized, heat-safe bowl, slowly sprinkle the gelatin over the lemon juice. Let the gelatin soak and bloom for about 5 minutes.

Strain the ginger tea into the bloomed gelatin and stir to dissolve.

Stir in the honey until dissolved, then add in the lemon juice and zest.

Pour the mixture into silicone molds or a 9×9 inch baking dish.

Refrigerate until set (about 3 hours). Then score, if using a baking dish.

    I am a ginger fan the spicier the better — if I wanted to make them spicier, would I just increase the amount of ginger I’m soaking in the water to make more concentrated?

    How do you store them? Do you think they would be good for upset stomachs? I would probably make the ginger stronger. My husband eats ginger candies for his stomach. I’m trying to find a less sugary healthier alternative for him.

      Yes, if you up the ginger they will work for an upset stomach. I have used them that way for my kids. I just store them in the fridge.
